Losing weight is something, gaining muscles is something and maintaining weight is completely something different.
If you're trying to lose weight you MUST be in a calorie deficit all the time. If you started at 250lbs and in a few weeks you're at 235lbs, you must reduce your calorie intake immediately.
Therefore you can't keep the same food portion you had in the first few weeks, if you do, you're going to gain weight again. You must update your diet biweekly based on your new weights and measurements to keep you in a calorie deficit so you can keep losing fat.
Same as if you're trying to gain muscles, you need to stay in a calorie surplus.
If you're at 150lbs and in a month or so you're at 155lbs, you need to increase your calorie intake WITHOUT gaining fat.
If your nutrition menu and exercise program don't change, then your body won't change either.
Also, people get tired easily from the same diet every day, changing your diet and the food you eat is necessary, not only to keep you on track for long-term success but also to check your energy level, sleep quality and how your body adapts and recovers.
